Zucchini Stuffed with Goat Cheese and Yellow Tomato Sauce

Ingredients

For the Yellow Tomato Sauce:


●2 ripened yellow or red tomatoes
●1/8 cup minced garlic
●1 Tbsp olive oil
●Salt
●Pepper

Instructions:


1. Preheat oven to 350 degrees F.

2. Wash zucchini and pat dry. Cut zucchini ends off and slice in half. With a paringknife or melon baller, core out the zucchini center.

3. In a mixing bowl, combine the bread crumbs and goat cheese. Add lemon zestand basil and mix well. Season to taste with salt and pepper. Spoon the goatcheese mixture into the zucchini center.

4. Drizzle olive oil on top of the stuffed zucchini and season with a bit of salt andpepper to taste. Place the pieces on a baking sheet and bake for 25 minutes oruntil cheese bubbles and bread crumbs are golden brown.

5. Meanwhile, make the yellow tomato sauce by coring the tomatoes. Blanche themin salted water for 10 seconds, then shock them in an ice water bath. Let chill for3 minutes, then remove from the water and peel off the skin. Cut tomatoes in halfand squeeze out seeds and pulp. Put tomatoes in a blender, pour in the garlic, andblend on high. Gradually pour in the olive oil as you blend for 3 minutes. Seasonto taste with salt and pepper.


6. Take zucchini out of the oven and drizzle with Yellow Tomato Sauce on top. Popback into the oven and bake for 1 minute, then serve.
