Makes: 3 servings


●1 1/2 Tbsp olive oil
●1 medium zucchini, chopped
●1 small onion, chopped
●1 1/2 cloves garlic, crushed
●3/4 lb ground beef
●1 Tbsp snipped fresh parsley
●1/2 beaten egg
●1/3 cup grated Parmesan cheese
●1/2 tsp kosher salt
●1/4 tsp pepper

1. Preheat oven to 350 degrees F F.

2. Place skillet over medium heat and heat the olive oil. Saute the onion, garlic, andzucchini for 7 minutes. Set aside to cool for a bit, then transfer into a big bowl.

3. Add the beef, egg, cheese, parsley, salt, and pepper to the zucchini mixture. Withclean hands, mix well.

4. Pack the meat mixture into a loaf pan or on a broiler rack. bake for 80 minutes oruntil the juices run clear but the loaf is not dried out. Slice and serve.
