1. Place a nonstick skillet over medium heat. Heat the olive oil and saute the ginger,onion, and garlic for 5 minutes or until onions become translucent. Add the currypowder and coriander. Stir for 1 minute.
2. Add the tomatoes and zucchini and stir to coat. Simmer for 8 minutes or untilzucchini is tender. Serve immediately.
