1. Place sauce pan over medium heat and heat the olive oil. Saute the shallots,garlic, and red pepper for 8 minutes or until golden. Add white wine, clams, andlemon juice. Cover and let boil. Keep cooking for 5 minutes or until clams open.Discard clams that do not open.
2. Once clams have opened, add the butter and season with red pepper flakes, salt,and pepper to taste. Add the cucumber and zucchini “noodles” and toss to coat.Cook for 7 minutes or until noodles wilt and are warmed through.
3. Divide between two bowls and top with clams and juices. Garnish with parsleyand lemon zest on top, and serve.
