Whole Wheat Buttermilk Pancakes

Ingredients

This is a great tasty, old-fashioned pancake. It reminds me of the kind of things my grandmother used to make.
1 cup (120 g) whole wheat pastry flour
½ teaspoon baking soda
¼ teaspoon cinnamon
1¼ cups (295 ml) buttermilk
2 eggs
3 tablespoons (45 ml) canola oil

Whole Wheat Buttermilk Pancakes

Blend  dry  ingredients.  Blend  wetingredients  except  oil.  Mix  the  twomixtures  together.  It  will  be  slightlylumpy. Heat oil in cast-iron skillet. Pour
one-quarter of the batter into pan. Whenpancake  bubbles,  turn  and  cook  1  to  2minutes more.

Yield: 4 servings
