Like miniature pieces of pizza, these small wedges are sure to be a hit with nibbler of all ages.
2 teaspoons chopped garlic
1 cup (180 g) sliced tomato
2 tablespoons (28 ml) olive oil
1/8 teaspoon black pepper
6 ounces (170 g) mozzarella cheese,sliced
2 whole wheat tortillas
2 tablespoons minced fresh basil
½ cup (50 g) grated Parmesan cheese
In a small bowl, place the garlic, tomato,
olive oil, and pepper. Thoroughly coat thetomatoes. Place the cheese slices over thetortillas. Place the soaked tomatoes ontop. Sprinkle on the basil and Parmesancheese. Preheat the oven to 350°F (180°C,gas mark 4). Place the tortillas on a bakingsheet and bake them for 8 minutes or untilthe cheese is melted. Cut each pizza into 3wedges.
