Vegetable Quesadillas

Ingredients

If you have an indoor grill like the GeorgeForeman models, it is perfect for makingthese quesadillas. If not, place them on abaking sheet in a 350°F (180°C, gas mark4) oven until crisp. Serve them with salsaand sour cream.

¼ cup (55 g) unsalted butter
2½ teaspoons chili powder
1 teaspoon minced garlic
1 teaspoon oregano
8 ounces (225 g) mushrooms, sliced
1 cup (150 g) sliced green bell pepper
2/3 cup (110 g) finely chopped onion
½ cup chopped fresh cilantro
1½  cups  (175  g)  shredded  MontereyJack cheese
2 tablespoons (28 ml) olive oil
16 corn tortillas,
5½ inch (14 cm)

Vegetable Quesadillas

Melt  the  butter  in  a  large  skillet  overmedium-high  heat.  Add  chili  powder,garlic,  and  oregano  and  sauté  about  1minute.  Add  mushrooms  and  sauté  untiltender,  about  10  minutes.  Remove  fromheat and mix in the bell pepper, onion, andcilantro. Cool for 10 minutes and then mixin the cheese. Lightly brush oil on one sideof  8  of  the  tortillas.  Divide  vegetablemixture among tortillas, spreading to eventhickness.  Top  with  the  remaining  8tortillas  and  brush  tops  with  oil.  Grillquesadillas  until  heated  through  and
golden brown, about 3 minutes per side.Cut into wedges (4 to 6) to serve.
