●1/2 lb beef top sirloin (fat removed)
●1/4 cup light soy sauce
●1/8 cup chopped cilantro stems
●1/2 cup freshly squeezed lime juice
●1/6 cup palm sugar or granulated sugar
●1/2 Tbsp Thai fish sauce
●1 Tbsp olive oil
●1 medium red onion, thinly sliced
●1/8 cup scallions, sliced diagonally at 1/2 inch
●1/8 cup cilantro leaves
●Optional: 2 kaffir lime leaves, shredded
1. In a medium sized bowl, combine the soy sauce and cilantro stems. Marinate the beef in the mixture for 3 hours.
2. In a pot, combine the lime juice, fish sauce, and sugar. Place over medium-lowheat and stir until sugar dissolves. Set aside and chill.
3. Place a saute pan over high heat and heat for 5 minutes. Take sirloin out of themarinade and drizzle on both sides with olive oil. Sear top sirloin for 3 to 4minutes per side. Thinly slice and set aside.
4. In a salad bowl, combine the red onion, cilantro leaves, and scallions. Add kaffirlime leaves. Put the sliced beef top sirloin on top and pour chilled lime and sugarsauce on top. Serve.
