This is an easy microwave recipe for tasty popcorn-and-peanut bars.
¼ cup (55 g) unsalted butter
2 tablespoons (28g) shortening
12 ounces (340 g) chocolate chips
5 cups (250 g) miniature marshmallows
¾ cup (109 g) peanuts
6 cups (48 g) popped popcorn
Spray a 9 × 12 × 2-inch (23 × 30 × 5 cm)microwave-safe dish with nonstickvegetable oil spray. Set aside. Measureand mix butter, shortening, and chocolatechips in bowl. Microwave uncovered on
high (100%) until chips are softened andmixture becomes smooth when stirred—about 2½ minutes. Stir in marshmallows.Microwave uncovered until they arealmost melted— 15 to 20 seconds. Stir inpeanuts and popcorn until evenly coveredwith mixture. When cool, press in panwith spoon. Refrigerate until firm—about1 hour. Cut into squares.
