Ingredients

I’m not sure where the name comes from,but someone told me that’s what this veggie roll-up is called. Whenever you call it, it’s tasty and filling.

½ cup (80 g) sliced onion
2 teaspoons (10 ml) olive oil
1 teaspoon (5 ml) barbecue sauce
2 whole wheat tortillas
1 tablespoon mayonnaise
1 cup (71 g) broccoli, cut in florets andsteamed
½ cup (50 g) cauliflower, cut in floretsand steamed
2 slices dill pickle
2 tablespoons grated carrot
2 tablespoons grated red cabbage
2 tablespoons grated yellow squash
½ cup (28 g) shredded lettuce
½ cup (17 g) alfalfa sprouts2 slices avocado

Sauté onion in oil until it begins to soften.Add  barbecue  sauce  and  sauté  untiltender.  In  hot  dry  skillet,  heat  tortillas,turning from one side to the other until softbut  not  crisp.  Place  on  large  sheet  ofplastic  wrap.  Spread  tortillas  withmayonnaise. Add broccoli in a line downcenter.  Add  cauliflower,  pickle,  gratedvegetables,  and  a  line  of  barbecuedonions.  Top  with  lettuce,  sprouts,  and
avocado.  Roll,  crepe  style,  around vegetables.  Wrap  tightly  until  ready  to serve.

Yield: 2 servings
