Makes: 3 servings


Ingredients:


●1 Tbsp olive oil
●1/4 white onion, diced
●1/2 Tbsp chopped garlic
●1/2 Tbsp chopped anchovy
●1 Tbsp chopped parsley
●1 lb mussels, raw, scrubbed, and debearded
●3 Tbsp pastis
●Splash of white wine
●1/8 cup tomato sauce

Instructions:
1. Place saute pan over medium heat. Heat olive oil, then saute onion until tender.Add anchovy, garlic, mussels, and parsley. Cook for 3 minutes or until musselsopen.
2. Add pastis, be aware that it can easily catch fire so raise the saucepan from theflames if you are cooking on a gas range. Add the tomato sauce and white wine.Cover and simmer for 3 minutes until all shells open. Discard unopened shellsafter 5 minutes of cooking time.
3. Transfer mussels and tomato broth into a deep serving dish. Serve.
