1 - Put 3 tablespoons (45 ml) cold water in a small bowl. Sprinkle gelatin evenly over the water; lets often for 5 minutes.
2 - Put another 3 tablespoons (45 ml) water, the sugar, lemon zest, lemon juice, oil and egg in asaucepan and whisk together until well combined. Place the pan over a low heat and cook,whisking constantly, for about 5 minutes, or until the mixture is hot. Whisk in the softened gelatinand cook, whisking constantly, until the gelatin has dissolved.
3 - Remove from the heat, transfer the lemon mixture to a bowl and cool to room temperature,whisking occasionally.
Whisk in the yogurt.
4 Layer the strawberries and lemon mousse into eight dessert bowls and place in the fridge to chill for about 3 hours, or until set.
