Lamb and Legume Chili

1. Mix together the onion, garlic, and lamb in a stockpot. Cover and place overmedium heat. Cook for 5 minutes or until ground lamb becomes crumbled andbrowned. Stir as you cook.

2. Drain the lamb mixture in a colander to get rid of as much fat as possible. Returnthe mixture into the stockpot.

3. Add the wine, tomatoes, chili powder, garam masala, coriander, and chili. Bringto a boil, then cover and lower heat. Cook for 2 hours, stirring every so often.

4. Add the black beans, chickpeas, and lentils. Let simmer for 25 minutes, thenserve immediately.
