1. Prepare a medium sized pot with a tight lid. Lightly grease the pot with nonstickcooking spray. Place over medium heat and sauté onions, celery, and carrots for5 minutes or until onions become translucent.
2. Stir in the yucca, zucchini, tomatoes, thyme, oregano, bay leaf, and chicken broth.Season with white pepper and stir to mix well.
3. Increase to high heat and bring soup to a boil. Cover with the lid and let simmerfor 15 minutes.
4. Take out the bay leaf from the soup and serve immediately.
