Ingredients

I chop the spinach coarsely so that it retains its character. You can use one package

of frozenwhole leaf spinach, thawed and coarsely chopped, instead of fresh.

 

1 - Heat the tortillas in a 350°F oven for 5 minutes.

2 - While the tortillas are heating, in each of 2 small nonstick skillets melt 1 teaspoon of but-ter over medium-high heat. To each skillet add 1 whole egg with the yolk unbroken and 1 eggwhite. Season with salt and pepper. Cook about 1 to 2 minutes or to desired doneness. (If youprefer eggs “over,” turn them before topping with cheese. Place a slice of cheese over each eggportion.

3 - Remove the tortillas from the oven and place one on each plate. Top each with one of thefried eggs, then put 2 tablespoons of salsa on each portion.

SERVES: 2
