Ingredients

Another of those old-fashioned breakfast meals. Do you suppose that I keep saying that because people ate more healthy food in the good old days?

1 cup (235 ml) boiling water
¾ cup (105 g) cornmeal
1¼ cups (295 ml) buttermilk
2 eggs
1 cup (120 g) whole wheat pastry flour
1 tablespoon baking powder
¼ teaspoon baking soda
¼ cup (60 ml) canola oil

Cornmeal Pancakes

Pour water over cornmeal, stir until thick. Add buttermilk; beat in eggs. Mix flour,baking powder, and baking soda. Add to cornmeal mixture. Stir in canola oil. Baked On hot griddle.

Yield: 7 servings
