Cinnamon–Oat Bran Pancakes

Ingredients

These are the kind of pancakes you want on a snowy day, warm and flavorful. The Good news is they are also a lot better for you than the regular boring pancakes.

¾ cup (75 g) oat bran
¾ cup (90 g) whole wheat pastry flour
1 tablespoon sugar
½ teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon baking soda
1¼ cups (295 ml) butter milk
1 tablespoon (15 ml) canola oil
½ cup (55 g) finely chopped pecans

Cinnamon–Oat Bran Pancakes

In  medium  mixing  bowl,  combine  dryingredients.  Set  bowl  aside.  In  a  smallmixing bowl, combine buttermilk and oil.Add to dry ingredients, stirring until justcombined.  Stir  in  pecans.  Cook  on  hotgriddle.  Use  ¼  cup  batter  for  eachpancake.
