This can be served as a tasty little snack or as a nice side dish.
10 ounces (280 g) frozen broccoli
1 cup (72 g) stuffing mix
½ cup (50 g) grated Parmesan cheese
3 eggs, beaten
4 tablespoons (55 g) unsalted butter,softened
¼ teaspoon black pepper
Cook broccoli according to packagedirections; drain well. In a medium bowl,combine cooked broccoli, stuffing mix,cheese, eggs, butter, and pepper. Shape
mixture into small balls, about 1 inch (2.5cm). Freeze, well covered, for at least 3hours. Preheat oven to 350°F (180°C, gasmark 4). Place frozen balls on bakingsheet coated with nonstick vegetable oilspray. Bake until brown, about 15minutes.
