Ingredients :
60g sausage
2 eggs
2 mushrooms
1/4 spinach
1 tbsp olive oilpinch salt and pepper
1/2 avocado
70g tuna can
1 tbsp mayo
1 tsp sliced green onionpinch salt and pepper
1. Slice the mushrooms.
2. Heat the oil in a small non stick frying pan and fry the sausages. Once cooked, add them to a plate. Fry the mushrooms and fresh spinach until soft and add the eggs. Scramble until cooked, sprinkle the salt and pepper, and add to the plate.
3. Scoop out the insides of the avocado, and mix mayo and salt with tuna and the green onions, and pepper in a small bowl. Refill the avocado shell with the bowl ingredients.
